Mixed Greens Salad with Avo Poppyseed Dressing

Ingredients

Salad Dressing Ingredients

  • 1/2 avocado
  • 2 teaspoons honey
  • 2 tablespoons orange juice
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon mayonnaise
  • 1/2 tablespoon dry mustard
  • 1/2 tablespoon white onion
  • 1 tablespoon avocado oil
  • 3 tablespoons poppy seeds
  • 2 tablespoons water

Salad Base Ingredients

  • 2 avocado (diced)
  • 4 cups butter green lettuce (green leaf)
  • 2 cups baby spinach
  • 1/2 cup strawberries (cut into quarters)
  • 1/2 cup blueberries
  • 1/2 cup mandarin orange segments
  • 2 ounces reduced-fat feta (crumbled)
  • 1/4 cup pecans (halved)

  1. First, place all dressing components into a food processor and process to a smooth consistency. Use the remaining dressing for another use.
  2. Then, put the greens in a large bowl, add the strawberries, blueberries, avocado, pecans.
  3. Drizzle the salad with the Avo Poppyseed Dressing, crumble feta on top and serve.
